Swap the maple syrup for cane sugar or coconut sugar, and add more if you’d like. Plus, don’t forget to top it with ice cream. I topped mine with homemade coconut milk ice cream. The Sourdough Cherry Cobbler Filling
What a simple and easy dessert. I don’t know about you, but I don’t like to spend my summer days in the kitchen. I prefer to be outside in the gardens or by the lake. So I’m always looking for easy desserts that are in season. Plus, cherries are probably my favorite filling for any pie, cobbler or tart. Some people dismiss cherries when they think about the work that goes into pitting them. But I actually like this task. Sometimes a mindless task in the kitchen allows you the opportunity to tune out the world and just be alone with your thoughts. I think we could all use a bit more of this.
The cherry filling is super simple, its merely cherries, orange juice, corn or tapioca starch and a bit of maple syrup. That’s it! So healthy and easy.
The Sourdough Cherry Cobbler Topping
This einkorn sourdough topping is incredible! Seriously incredible, it is sour and sweet, making it the perfect addition to the tart cherries. Talk about a burst of flavors. In addition, it is long-fermented, which increases its nutritional content and improves digestibility. Thus making it easier for those with gluten sensitivities to tolerate, especially when you use einkorn flour.
Einkorn flour is an ancient heirloom wheat, the only wheat that has never been hybridized. Modern hybridized wheat is the reason we are seeing so many gluten sensitivities and intolerances. But when you switch to baking with ancient grains, most people see these issues slowly disappear. Sometimes, older is better.

Long-Fermented Sourdough Cherry Cobbler

Ingredients:
For the Sourdough:
- 3/4 cup active sourdough starter
- 2 and 1/2 cups all purpose einkorn flour
- 1 tsp sea salt
- 1/2 cup coconut oil, room temperature
- 1 cup coconut milk
- 1 tsp apple cider vinegar
- 2 tsp baking powder
For the Filling:
- 2.5-3 cups cherries, pitted and halved
- 2 tbsp maple syrup
- 1 tbsp cornstarch or tapioca starch
- 1 tbsp orange juice
- 1 tsp vanilla extract
Directions
- The night before you’d like to bake your cobbler, prepare the sourdough batter. This is completed by combining your flour and sea salt in a large bowl.* Then add in the room temp. coconut oil and combine using a pastry cutter (it will be a very course texture). In a smaller bowl, whisk together your coconut milk and apple cider vinegar. Slowly add the coconut milk mixture to the large flour bowl. Finally, add in your sourdough starter and mix until a smooth dough forms.
- Cover your bowl with plastic wrap and allow to sit overnight on your counter (~12 hours) to ferment.
- In the morning, prepare the filling. Add the maple syrup, cornstarch, orange juice and vanilla extract to a saucepan and stir. Then add in the cherries and cook for a few minutes over medium low heat until the sauce has slightly thickened.
- Preheat your oven to 375 F.
- Melt 2 tbsp of butter or coconut oil in a large 10″ cast iron skillet. Once the butter is melted, remove the skillet from heat and add the filling.
- Add the 2 tsp of baking powder to your sourdough batter and stir very well to combine. Then, using a half cup measuring cup, scoop the dough and place on top of the cherry filling in the skillet. You will likely need to scoop the dough 6-8 times.
- Bake at 375 F for 35-45 minutes, or until the sourdough is golden. Serve warm with vanilla ice cream! Enjoy!
