An Introduction to Cass’s Journey
Hi, my name is Cass, short for Casandra and I have a love for baking and learning homemaking skills. When I came across Colleen’s page Raw Milk and Recipes on Instagram, I was excited to see that someone else shared my love for these things and I was inspired to try baking the Einkorn bread recipe for that reason.
Going from Gluten-Free to Einkorn Wheat
I also wanted to try the Einkorn bread because I have been gluten-free for years and wanted to try to incorporate gluten back into my diet in a gentle way. Let’s just say, I was very pleased with how the Einkorn bread turned out! I started making it weekly because my husband and I loved it so much! I started getting creative with it and made sandwiches and toast which led to me finding my favorite way to enjoy it thus far. I made a salmon grilled cheese melt one day and was hooked.
To this day I still enjoy Einkorn bread more than I do most breads, and my husband always enjoys it when I make it. If you have been looking for a bread that won’t disappoint, this is for you! Einkorn bread is so versatile and can be used for so many things. We love to eat it for breakfast, lunch or as a snack. I’d like to share my salmon melt recipe so others can enjoy it just as much as I have!

Salmon Grilled Cheese Melt on Einkorn Bread
This nutrient dense sandwich is packed full of flavor! With salmon, cheese, spinach and butter you can be sure you’re eating a healthy lunch. Plus, when placed on grilled einkorn bread, it’s always a treat. And don’t forget to pair it with your glass of raw milk!

Ingredients
- 1 can wild caught salmon
- 2 slices of cheese
- 1 tbsp butter
- Handful of spinach or lettuce
- 2 slices of einkorn bread (Find the recipe for Beginner Einkorn Bread here)
Directions
- Bake the Einkorn Bread, following the recipe here.
- Cut 1 slice from the loaf and then either cut it in half, or diagonally if preferred. Place the 2 pieces in a pan layered with butter and grill it like you would if you were making grilled cheese.
- Just after placing in the pan, place your choice of favorite cheese on the slices and grill the sandwhich till it is almost done.
- Open the sandwich once cheese has melted and place salmon (or tuna if you prefer) in the sandwich while it is still cooking in the pan, as well as spinach or mixed lettuce. I salted and peppered mine to enhance the flavor. Grill the sandwich about a minute or 2 and remove it from the pan.
- The sandwich is ready to eat and enjoy! You can use any kind of spread or dip if you like, but the flavor is excellent by itself. The butter and cheese really bring out the flavors!
