Pudding is not just for kids!
I absolutely love pudding, especially during the holidays. But there is just something so delicious about homemade pudding. And this is because homemade pudding tastes much more rich and creamy than your standard store bought pudding in a cup. It’s like comparing apples to oranges. So if you’re looking for a super quick dessert recipe that you can whip up on a Tuesday night and make your family feel all the holiday joy, look no further. Let’s get baking!
Why Raw Milk?
If you haven’t tried raw milk yet (and it’s available in your state) you are doing yourself a disservice. Raw milk is milk that has not been pasteurized. This means that is has not been heated to high temperatures to destroy any harmful bacteria. This pasteurization process was necessary back when farmers kept their cows in poor living and sanitary conditions. But today, when cows are allowed ample space to roam on open green pastures, this process is unnecessary, and even, harmful to your health.
Pasteurization not only removes harmful bacteria, but is also removes the good bacteria, particularly the enzyme lactase which helps your body to digest the lactose in milk. It is being shown today that this removal of the lactase enzyme is actually what has caused so many people to develop lactose intolerance over the past few decades. So, if you consume raw milk, in its whole form, you are getting everything your body needs to properly digest the milk. I had lactose intolerance for over a decade, and can drink raw milk by the gallon with no issues today. Hence why my site is called ‘Raw Milk & Recipes’. I simply love being able to eat real food again.
Easy Pudding for the Holidays
Pudding for Christmas? Sign me up! With all the cookies and cakes we make during the holidays we can sometimes get tired of baking desserts. They take a long time and are often filled with sugar and processed flours. So if you want to make something sweet, but slightly healthier this Christmas, look to the pudding. What an underdog in the world of dessert. But when made with raw milk, cream, egg yolks, cacao and coconut sugar, it is a much more nutritious alternative to any other Christmas dessert. And it is so quick and easy to make!

- 3 tbsp all purpose einkorn flour (recommended brand)
- 3 tbsp cacao powder (recommended brand)
- 2 cups raw milk
- 2 egg yolks
- 1/2 cup chocolate chips
- 1/4 tsp peppermint extract
- 1/4 tsp sea salt
Directions
- Add the sugar, flour, cacao powder and sea salt to a medium bowl and stir to combine.
- Add in 1/4 cup of the raw milk and the egg yolks (one at a time) to the bowl and whisk to combine. Set aside.
- In a small saucepan over medium high heat, add the remaining 1 and 3/4 cups of raw milk and bring to a low simmer.
- Once lightly simmering, remove from the heat and very slowly add the hot milk to the cacao powder mixture. Whisk constantly to combine. (Don’t scramble the eggs!)
- Add the entire mixture back to the saucepan and return to medium heat. Whisk constantly until thickened (about 2-3 minutes).
- Remove from heat and add the chocolate chips and peppermint extract. Stir until smooth.
- Transfer the pudding to a glass mason jar or container and allow to cool in the fridge. The pudding will thicken more in the fridge as it cools. Serve chilled and topped with whipped cream and peppermint candy!
