What is buckwheat flour?
Buckwheat is a flowering plant typically used as a cover crop in agriculture. It is cultivated for its seeds, that appear almost like a grain. However, they are not a grain at all. Similar to quinoa in the sense that it is a seed which acts like a grain. This makes buckwheat entirely gluten free, despite the word wheat in its name. Buckwheat provides a nutty, earthy flavor that will make a wonderful addition to your pantry, especially when made into buckwheat muffins.
Buckwheat has many nutritional benefits. First, it is high in protein for a “grain” at around 5 grams per serving. It is also high in fiber, copper, iron, phosphorus and magnesium. Grains are a hot topic today and ultimately should be consumed with caution and proper preparation. If you experience digestive upset, or have celiac disease it is best to avoid grains altogether. Why you should avoid gluten free box mixes
If I have celiac or gluten sensitivities, can’t I just buy a 1 to 1 gluten free box mix? Most of these mixes are not grain free. They are typically made with rice flour. Most even contain sugar, additives and preservatives which make them no better than refined white flour. You could use coconut flour, but I find the texture to be slightly off-putting in most baked goods. Almond flour or any other nut or bean flour has not been properly prepared to neutralize phytic acid and is best avoided unless you make it yourself. But buckwheat flour, has no problems as far as I can tell. It tastes great and is easy on your digestive tract.

How to Make a Master Buckwheat Muffin Recipe
This ‘master’ buckwheat muffin recipe is the foundation for all other muffins to come. It can be turned into anything from chocolate chip to berry to pumpkin cheesecake and more. But don’t worry it tastes amazing all on its own.

Ingredients
- 2 cups buckwheat flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup melted butter
- 1/3 cup raw honey
- 4 tbsp raw milk
- 2 eggs
- 1/2 cup yogurt
- 1 tsp vanilla
Directions
- Preheat the oven to 350 F. Line or oil your muffin tin.
- In a large bowl, combine the flour, baking powder, baking soda, cinnamon and salt.
- In a medium bowl, whisk the melted butter, honey, milk, eggs, yogurt and vanilla. Then fold the wet ingredients into the dry ingredients. Add in any mix ins (chocolate, fruit, nuts, etc). Spoon the batter into the prepared muffin tin about 3/4 full.
- Bake at 350 F for 15-20 minutes, or until the muffin top springs back when gently pressed, or a toothpick inserted comes out clean. Cool on a wire rack before serving. Enjoy
